For a quick and lower calorie pizza base you can use a tortilla to build a tortilla pizza. It takes just a few minutes under the grill or in a toaster oven and is a great tasty meal in a hurry.
You can, of course, use other toppings, but today I had cherry tomatoes and cheddar cheese to use up!
Ingredients:
- 1 tortilla wrap
- 1 tablespoon of tomato & chilli chutney
- 25-30 grams cheese, grated or thinly sliced
- 4-5 cherry tomatoes
- 1 teaspoon of dried oregano (optional)
Method:
- Place your tortilla wrap onto a sheet of foil or on a baking tray.
- Spread the tomato chutney across the tortilla – this is your tomato pizza sauce.
- Sprinkle the cheese over the tomato pizza sauce.
- Slice or chop up the cherry tomatoes and dot those on top.
- Sprinkle with a little oregano if you have it.
- Place the tortilla under the grill, or in the oven for 10-12 minutes, until the cheese has melted and the pizza is the colour you like it to be!

Tips:
If you don’t have any tomato chilli chutney, just use 2 tablespoons of tomato ketchup with half a teaspoon of chilli powder!
