Tortilla Pizza Recipe Cheese Cherry Tomato Oregano

For a quick and lower calorie pizza base you can use a tortilla to build a tortilla pizza.  It takes just a few minutes under the grill or in a toaster oven and is a great tasty meal in a hurry.

You can, of course, use other toppings, but today I had cherry tomatoes and cheddar cheese to use up!

Ingredients:

  • 1 tortilla wrap
  • 1 tablespoon of tomato & chilli chutney
  • 25-30 grams cheese, grated or thinly sliced
  • 4-5 cherry tomatoes
  • 1 teaspoon of dried oregano (optional)

Method:

  1. Place your tortilla wrap onto a sheet of foil or on a baking tray.
  2. Spread the tomato chutney across the tortilla – this is your tomato pizza sauce.
  3. Sprinkle the cheese over the tomato pizza sauce.
  4. Slice or chop up the cherry tomatoes and dot those on top.
  5. Sprinkle with a little oregano if you have it.

  6. Place the tortilla under the grill, or in the oven for 10-12 minutes, until the cheese has melted and the pizza is the colour you like it to be!

Tips: 

If you don’t have any tomato chilli chutney, just use 2 tablespoons of tomato ketchup with half a teaspoon of chilli powder!
