… unfortunately, Paxo Parsley & Thyme stuffing was discontinued it seems. This is no longer sold that I can find! – you’ll have to make your own! So this is my quick cheats parsley & thyme stuffing mix recipe.
Paxo Parsley & Thyme stuffing was always the stuffing we had at home, it was even a Christmas Day staple. I’ve never really liked sage & onion as I found it a bit bland, but parsley & thyme stuffing was gorgeous!
I guess it started about 25 years ago, when we first noticed we couldn’t find plain parsley & thyme stuffing; Paxo and others were doing a version that included lemon. We didn’t want parsley, thyme & lemon stuffing! Every year, in the run up to Christmas, the whole family used to keep their eyes peeled for an elusive pack of parsley & thyme stuffing without lemon… in recent years, though, it’s become extinct.
But … it’s possible to make a similar variation starting with simple, cheap, sage and onion stuffing. This is a simple “Cheats Parsley & Thyme Stuffing Recipe” that just fills that gap without going to any great lengths or effort.
Ingredients:
- ~40 grams dried stuffing mix, just the sage and onion supermarket own brand will do (this is a large portion for one person, or about 4 stuffing balls).
- 2-3 teaspoons dried thyme.
- Optional: 2-3 teaspoons dried parsley
- A knob of butter
- Boiling water (about 120 grams/120 ml)
Method:
- Using just a cheap, own brand, packet of stuffing mix (these do tend to be sage and onion), add the dried thyme and a knob of butter. If you are using parsley, add this in here too – I’m not a fan of parsley to be honest, so often just don’t bother with it 🙂
- Add boiling water from the kettle and give it a good stir – I find a mug is sufficiently large for this. Set the wet stuffing mix aside for the water to thoroughly soak in. Some own brands soak in quicker than others, e.g. supermarket budget stuffing mix is smaller cut, so soaks in more quickly than the Aldi and Lidl versions (which are chunkier).
- After 10 minutes just poke the stuffing mix about a bit, to ascertain if it’s a bit dry and needs a splash more water, or is just how you like it! Give it a little taste – you can always add a little more thyme if you wish. You can just cover your mug/dish and leave it now until you’re ready to cook it…. if you do set it aside for quite awhile though you might need to add a tiny splash more water if it’s really soaked in and a little “dry”
- Microwave the mug of stuffing mix for 2-3 minutes. OR: Transfer to a small oven dish and bake in the oven for 20 minutes or so to get a crispy top.
This quick cheats parsley & thyme stuffing is one of the stuffings I’ll be serving myself on Christmas Day 🙂
