5 Minute Sausage & Egg Breakfast Bap

Cooked in under 5 minutes, this sausage and egg breakfast bap is a tasty start in the morning. Two sausages and one poached egg on a toasted bread roll this can be cooked with just a microwave oven and a toaster.

I’ll eat this for breakfast, as brunch, for lunch, or even a quick evening snack!  Today I’ve used Ashfield Butchers Select Lincolnshire sausages, from Aldi.

Serves one.

Ingredients:

• ½ or 1 bread roll, toasted
• 2 sausages
• 1 egg

Method:

1. Place two raw sausages in the microwave oven, in a microwave safe dish.  Cover with pierced cling film or a loose lid.  Microwave the sausages for 2 minutes, turn, microwave for a further 1-1½ minutes until they’re cooked.
2. To poach the egg, place the egg in a poaching pod in a microwave safe bowl with a lid and microwave on full power for 1 minute, then set aside.  See: Eggs in a Poach Pod
3. Toast the bread roll.
4. Peel off the sausage skins, which will have peeled away and slice the sausages in half.
5. Place the sausages on the toasted bread roll, splash your favourite brown sauce or ketchup on the sausages and top with a poached egg!

Recipe Variations:

Although today I’ve only used half a bread roll, this is equally good if you add a bread roll top to it and have the full breakfast bap experience, complete with runny yolk running down your chin 🙂  Or, simply microwave the poached egg for a little longer (another 15 seconds or so) to set the yolk so it’s firmer, or completely firm.

Or, skip the egg and microwave onions to add to the sausage and make an onion and sausage bap!

Brown sauce, or ketchup, both work with this, or how about a dollop of a tomato and onion chutney?

Menu Cost 57p:

I’ve used two sausages from a pack of eight that cost £1.39, so the sausages are 35p, the egg is 9p and the bread roll is 11p.  Add in the cost of the splash of brown sauce and the cost of this quick breakfast bap of sausage and egg is about 57p.
